Our olives stay fresh and delicious thanks to the Italian novel way of debittering
Fresh pickled olives are soaked in an alkaline solution, accelerating the debittering process, which can be completed overnight. This way, there is no drastic change to the taste, texture and colour of the fruit, which maintains a juicy and fresh flavour.

Green Castelvetrano
This Italian olive, with a protected designation of origin (DOP) can only be cultivated in the Belice Valley of Sicily.
The official name is Nocellara del Belice.
Green Cerignola
Cerignola are mainly cultivated in the Puglia region of south Italy. Their distinguishing trait is a firm and buttery pulp, along with their large size, one of the largest in the world. Cerignola are also used to embellish cocktails, for example, the famous dry Martini that James Bond likes to drink.
Black Castelvetrano
Once mature enough, olives assume brownish or blackish tones. This olive is the matured fruit of the Green Nocellara del Belice. It has a rich and oily flavour, making it a perfect ingredient for pasta and fish dishes. The Black Castelvetrano is used in all of Shelley’s mixed olives recipes.
Black Leccino
A type of black olive cultivated in the Italian region of Abruzzo. Its small size hides a juicy pulp and a fruity flavour. Leccino have a natural brown colour and are often used to produce oil.
Black Gaeta
Gaeta are cultivated mainly in the Italian region of Lazio. They sport a natural purplish shade and are a bit larger in size then Leccino. This variety can be used in a variety of recipes, for example those which require simmering.
Black Kalamata
This variety of black olives is harvested in Kalamata, a region in Greece. A cut is practiced on the fruit, which is then pickled in a brine solution with red wine vinegar and undergoes fermentation.
The pulp is soft and easy to separate from the pit. It has a delicate sourness and a natural brown colour. Kalamata are sometimes referred to as “Greece’s jewel” when it comes to olives.
